Pear & blue cheese flatbread

Some days it can be more challenging to come up with a tasty, easy and quick meal than to handle the endless emails in your mailbox. Who really wants to cook at lunch time? Not us. That’s why we have come up with some super easy 5-minute lunch ideas to create in a wink. This pear and blue cheese flatbread has a sweet and tangy taste that will definitely jazz up your daily lunch.

Ingredients

  • 2 flatbread rounds (we used Trader Joe’s Middle Eastern Flatbread)
  • 3 tbsp cream cheese
  • 3 tbsp milk
  • 1 pear
  • 3-4 tbsp blue cheese crumbs

Salt and pepper to taste (just a pinch will do!)
Handful of micro greens.

Preheat over to 400°F. Lay parchment paper on a baking sheet and place two flatbreads onto it.

Blend together cream cheese, milk, salt and pepper in a bowl. Wash and cut pear into wedges or circles.

Spread the cream cheese mix evenly onto the flatbed, arrange the pear slices and sprinkle with blue cheese crumbs.

Place the flatbread in the oven and bake for about 5-7 minutes. (Tip: you can also microwave this meal if you prefer.)

And some micro greens on top and enjoy your lunch!
